- Production method: hand harvested between the first and final ten days of September; fermentation is in stainless steel vats using selected yeasts at a controlled temperature of 18°-20°C for 7-12 days.
- Appearance: straw coloured with very light rose shades.
- Nose: wide, flowery and fruity when young, becomes complex after the second year.
- Taste: rich, fullbodied, with long and pleasant finish.
- Alcohol abv: 12,5%.
- Serving temperature: 9-10°C.
- Serving suggestions: aromatic soups, soft cheeses, ideal with fat fishes and shellfish.
